People say that Cagayan de Oro and Northern Mindanao have the best ‘kinilaw’ in the Philippines (see related article here). From kinilaw, another dish to die for is Sinuglaw which is short for Sinugba and Kinilaw. It’s grilled pork and raw fish mixed with vinegar and spices like ginger, onion, and pepper.
As a prelude of the upcoming Kumbira which is Mindanao’s biggest culinary show and competition, Cagayan de Oro hotels and restaurants came up with Sinuglaw Festival. Twenty establishments have participated and have been showcasing their own version of sinuglaw this year. This annual feast started last July 1 and will end on August 31. These participating restaurants offer 10% to their Sinuglaw treat. Kindly see the list of participants below.
All these activities are part of the Kagay-an Festival, Cagayan de Oro’s fiesta celebration to honor the city’s patron Saint Augustine. Cagayan de Oro’s sinuglaw is a must try experience. If you’re a tourist or a visitor, this is something that you must not miss.
